Ensalada de Nochebuena

Christmas Eve Salad

 
 
 

Ingredients:

  • 1 large beet
  • 1 large jicama
  • 3 large carrots
  • 1 head of lettuce
  • pulp of one small pineapple
  • two oranges, plus
  • the juice of one orange
  • 3 celery ribs, chopped or/and
  • one stick of fresh sugar cane
  • one pomegranate
  • 1/2 cup chopped toasted almonds

    Wash, spin, and dry the lettuce.  You can use iceberg or romaine lettuce, or a combination of both.  Chop the lettuce and place in a large salad bowl.  Refrigerate until needed.   Boil the beet in water, save some of that water to make a dressing.  Arrange the chopped fruits and vegetables over the lettuce, in an attractive manner.  Garnish with pomegranate seeds and the chopped almonds.  To make the dressing: dissolve 4 tablespoons of sugar in orange juice, add some of the beet water to color it red.  Don't dress the salad or it will turn soggy.  Serve the dressing separately
